Ingredients
For the Mujadara Rice:
• 1/2 white onion, julienned
• Avocado oil (enough to cover the bottom of the pot)
• 1 garlic clove, minced
• 1 teaspoon cumin
• 1/2 teaspoon turmeric
• Salt & pepper to taste
• 1 cup dry rice
• 1 teaspoon dry vegetable stock
• 1 small cinnamon stick
• 2 cups boiling water
For the Kebabs:
• 6-8 oz ground beef
• 1 teaspoon onion paste
• 1 garlic clove, minced
• 1/2 teaspoon powdered vegetable stock
• 1/2 teaspoon cumin
• Salt & pepper to taste
• Fresh chopped parsley to taste
For the Tomato:
• 1 tomato, sliced
• Avocado oil spray
• Salt & pepper to taste

• Fresh parsley, chopped

Preparing the Mujadara Rice:
1. In a pot, heat enough avocado oil to cover the bottom.
2. Add the julienned onion and sauté until golden brown.
3. Add the minced garlic, cumin, turmeric, salt, and pepper. Sauté for another 1-2 minutes until fragrant.
4. Stir in the dry rice, ensuring it's well-coated with the spices.
5. Add the dry vegetable stock and the cinnamon stick.
6. Pour in the boiling water and stir to combine.
7. Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the rice is cooked and the water is absorbed.
Preparing the Kebabs:
1. In a bowl, combine the ground beef, onion paste, minced garlic, powdered vegetable stock, cumin, salt, pepper, and fresh chopped parsley.
2. Mix until all ingredients are well combined.
3. Shape the mixture into even-sized kebabs (keftas).
4. Heat a skillet over medium-high heat and add a light spray of avocado oil.
5. Cook the kebabs in the skillet for about 3-4 minutes on each side, or until cooked through and nicely browned.
Preparing the Tomato:
1. Slice the tomato and place the slices on a baking tray.
2. Lightly spray with avocado oil and season with salt and pepper to taste.
3. Roast in a preheated oven at 375°F (190°C) for about 10 minutes, or until tender and slightly caramelized.
Serving:
1. Plate the Mujadara rice in the center of the plate.
2. Arrange the cooked kebabs alongside the rice.
3. Place the roasted tomato slices around the kebabs and rice.
4. Garnish with freshly chopped parsley.
5. Serve immediately and enjoy!
